The Arauco olive, naturally suited to Mendoza’s diverse terroir, is hand-harvested late in the season and cold-extracted to retain its full flavor and complexity. Zuccardi’s organic farming methods nurture both the land and its biodiversity, creating a sustainable grove ecosystem rich in native flora and fauna.
