Jean-Benoît and Catherine Hugues craft this unique oil from four local varietals—Salonenque, Aglandau, Grossane, and Verdale—allowing the fruit to rest without oxygen for three days to develop deep, savory flavors. The result is a luxurious, tapenade-like olive oil that’s perfect for cold preparations.

- At checkout, select the option: “I’ll pick it up myself.”
- In the order notes, let us know which Saturday you’d like to pick up.
- We’ll have your order ready and waiting at our Montclair Market booth.
