According to an ancient inscription found on a stone in the old olive mill in the Umbrian town of Campello sul Clitunno, the Gradassi family’s legacy of olive farming and coaxing the bright green colored liquid from the fruit to produce extraordinary olive oil, has been handed down since 1639 from father to father, grandfather to grandfather up to this very day.
Area: Designated as a D.O.P. meaning its origin is protected and its provenance guaranteed by the E.U., this olive oil is pressed from olives grown in the rocky hills of Umbria, specifically in the olive groves around the towns of Assisi and Spoleto.
Olive(s): 60% moraiolo with frantoio and leccino

Extraction Method: Cold extracted, within a day of harvesting
Color Notes: Yellow gold
Tasting Notes: The high percentage of moraiolo gives this oil a pungent punch typical of Umbrian olive oils, but is moderated by frantoio’s sweetness; an olive oil for those who like a bit of strength over fruit; aromas of tomato leaf and green herbs.
Personal Notes
Grilled foods, whether mushrooms or meat are complemented by liberal use of this oil. We’re crazy about it as a finish for hearty soups like lentil or bean, and for slathering over porchetta before roasting and after slicing.
