Gaetano Schiralli’s family started producing extra virgin olive oil in 1922 on the Hills of Bitetto, slightly southeast of Bari. The small family farm has more than 8,000 olive trees spread over 20 hectares, surrounded by the stone walls that are typically found in Puglia.

Crudo, the olive oil that results from hand-harvesting and on-site pressing of the olives within hours of picking, has been recognized as one of the world’s best, consistently awarded gold and silver medals at prestigious international extra virgin olive oil competitions.

Extraction Method: Cold press, continuous cycle within the first 12 hours after harvesting

Color Notes: Bright green with strong yellow undertones.

Tasting Notes: Medium to robust intensity, with strong aroma of green olive, almond and artichoke; finishes with a pleasant bitterness and lingering assertive olive taste.



Crudo means “raw” in Italian, so whenever we get a request for a full-bodied, full-flavored olive oil, with a bit of a pungent kick, this is the one we recommend. We use it liberally to dress our favorite seafood salad and true to its name, it stands up beautifully to raw greens, especially kale or broccoli salads. It’s also a favorite for pouring over whole olives and fresh herbs to complement a cheese platter.
