This is a traditional balsamic certified by the Italian Control Agency and authorized by the Balsamic Vinegar of Modena Consortium for the Geographic Indication Protection (IGP), or indicazione geografica protetta.
The flavor is smooth and rich with lovely cherry wood-tinged finish, owing to the percentage and density (1.18) of the must.
Drizzled over crispy, salad-topped (or not) veal or chicken cutlets is one of our favorite ways to enjoy the flavor of balsamic. Large crumbles of Parmigiano-Reggiano dappled with balsamic and served with sliced semolina bread and quartered Roma tomatoes is our idea of a heavenly snack.
