The Best Vinaigrette

Makes about 1/3 cup or enough to dress a salad to serve 4


Ingredients

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1/2 teaspoon finely chopped shallot

1/2 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

Preparation

  1. In a small cruet or jar with a tight-fitting lid, add ingredients in the order given
  2. Secure stopper or lid and shake to mix well.
  3. Pour over salad and toss gently but thoroughly.
